The ICCA Big Bake Off brought to you by International Centre for Culinary Arts - ICCA Dubai offers you the chance to showcase your talent on a big platform for the world to see and win Baking & Patisserie Courses worth AED 25,000 at the ICCA Dubai. 

We are back again with yet another interesting theme “The Magical Wedding Cake”, a classical to contemporary styled wedding cake of your imagination and creativity. 

The competition will see three Winners for the 1st, 2nd and 3rd places respectively, who will be selected by an eminent panel of judges such as the internationally renowned Jenny Morris and Reza Mahammed together with the ICCA Patisserie & Sugarcraft Chef Instructors, Chef Maia Tsakanova, Chef Sabeen Fareed, Chef Sally Handoko, Chef Vrushali Jadhav and the Master Sugarcrafter Nasarene Dhanki.

About the Bake Off

The theme “The Magical Wedding Cake” based on the classical to contemporary styled wedding cake of your imagination and creativity should incorporate elements that bring a touch of fantasy and magic.  

Information and details on the competition submissions:  

  • Interested participants are required to register to take part in the competition and the registration is free.
  • The last date of registration for the competition is Sunday, March 1st 2020. Entries sent after the deadline will not be accepted.
  • Only register if your participation is confirmed, as the finalists will be selected based on the information shared in the registration form.
  • There will be a pre-selection process for the participant submissions. The shortlisted participants will be contacted via email and will also be announced on the official ICCA Dubai social media channels on or before Wednesday, March 4th 2020.
  • The shortlisted participants will be required to attend a formal briefing session at the ICCA Dubai (Address & Location Map) followed by a photo shoot on Saturday, March 7th  2020
  • The shortlisted participants will be required to bring their fully finished cake to the competition venue by 5:15 PM, in time for the official competition starting at 6:00 PM.
  • The shortlisted participants will receive four (4) free Tickets to the Taste of Dubai 2020, one (1) for the participant and three (3) for the participant’s family & friends. A car pass (not a parking permit) will also be provided to help drop-off the cake at the venue.
  • The competition judging will be based on the visual display, creativity and the taste of the cake presented. Hence, the participants need to ensure that their cake not only looks good but tastes great as well.
  • The judging criteria will cover the following - 
    • Application of the Theme
    • Originality and Creativity
    • Technique and Proficiency
    • Construction conforming to the standards & criterions specified with respect to size, shape & structure specified
    • Taste and Flavour
  • The competition will be judged by an eminent panel of judges such as the internationally renowned Jenny Morris and Reza Mahammed together with a panel of ICCA Dubai Baking & Patisserie and Sugarcraft Judges.

Competition Date: Saturday, March 14th 2020

Competition Time: 6:00 PM (Participants are required to be present at the venue by 5:15 PM)

Competition Submission Details

  • The overall appearance of the cake must match the theme “The Magical Wedding Cake”. 
  • Please note that there are no specific flavours for this theme. The participants are required to ensure that the taste and flavours of the cake are creative and well thought of.
  • Inclusions of any explicit or inappropriate elements are strictly not allowed. 
  • All entries must be made of real cake and Styrofoam dummies are strictly not allowed. Those not conforming will be disqualified.
  • The dimensions of the cake (including cake board) should not exceed more than 20 inches in width or diameter and 24 inches in height. Those not conforming will be disqualified.
  • Edible and artificial decorations can be used to help complete the overall look & feel of the cake. However, it is important to ensure that at least 80% of the cake is edible. Those not conforming will be disqualified.
  • The inedible parts should only include columns, supports, wires, stamens, ribbons and fresh/artificial flowers, props, toys, if at all used.
  • Cakes can be stacked or tiered. It can also be based on a mould, shaped or carved to achieve the necessary outcome and incorporation of sugar decorations is encouraged.
  • Hygiene is very important and the cake needs to be covered during its transportation to the venue as it will be tasted by the judges. Fresh cream should be avoided for food safety reasons. Those not conforming will be disqualified. 
  • The competition and the judging will be inside a tent. Hence, the weather conditions around then would have to be kept in mind too, as the cake submitted for the competition will not be refrigerated or stored in anyway by the organizers.

Competition Requirements

  • The participant must be minimum 16 years of age and above.
  • The entry must be given a name, together with a description based on the flavors and type of the cake along with a detailed description about the design and idea. 
  • The entry must be the original work of the participant as listed on the registration form. Team or group entries are not allowed.
  • The cake must be the work of the participant and homemade (not store bought).
  • The participant must attach a sample photo or sketch of the concept planned in the registration form.

Competition Terms & Conditions

  • If the participant fails to meet any of the above mentioned criteria, they can be disqualified.
  • Incomplete applications and submissions will not be considered.
  • The participants need to ensure that they are present at the venue, Chef’s Theatre by 5:15 PM at the most. Those not conforming will be disqualified.
