The Artisan Pizza Program at the ICCA Dubai is delivered by the Pizza Masters themselves who fly in only twice a year, just to deliver the course all way from Scuola Nazionale di Pizza, Italy.

The Scuola Nazionale di Pizza, a subsidiary of Associazione Pizzerie Italiane (API), was established in the year 1992 by Master Pizza Maker Angelo Lezzi, President of API.

President Lezzi was the first World Champion of 'Pizza in Pan' and continued to win the title several times over. Having developed a great passion for teaching the art and extensively worked in the field, he finally went on to become the National Chairman of the Associazione Pizzerie Italiane (API).

His experience of working with leading producers of raw materials and technologies for Pizza production in Italy led him to develop skills as an expert consultant and a leading authority on the subject with national and international recognition with regards to planning the toppings, getting the right mix of flours, designing of furnaces and other critical parameters required to produce the best and the most authentic Italian Pizza.

The Artisan Pizza Making Program

ICCA Dubai in collaboration with The Scuola Nazionale di Pizza provides a range of courses in Authentic Traditional Italian Pizza production and the training approach is based on a comprehensive study, extensive research and experience of the Masters of Pizza, that guarantee the highest quality and value in the learning delivered.

The highly intensive classes are aimed to teach the basic theoretical and practical concepts necessary to make Authentic Italian Pizza.

All the Equipment, Ingredients, Protective Gear and Course Materials are provided for the duration of the course.

The Artisan Pizza Making Program at ICCA Dubai is offered at three (3) levels for you to choose from - 

1. For the Home Bakers looking to develop personal skills

Pizza at Home

This is a course for those looking to learn the art of Authentic Italian Pizza making to enhance their personal skills in the art of Pizza making for their family and friends.

Course Plan & Subjects

This 1-Day (8 Hours) course covering theory as well as hands-on practical learning teaches you the basics of Authentic Italian Pizza making such as kneading, rolling-out, seasoning and cooking a Pizza. 

The course also addresses the common mistakes and the solutions of working with a Pizza dough to achieve the right texture by understanding the chemical and physical characteristics of the base ingredients.

2. For the Commercial Cooks seeking to learn new concepts

Pizza for Commercial Cook

This course is specially designed for cooks working in Pizza outlets or Pizzerias, and helps them get a greater understanding of the contemporary processes of doughs and learn new concepts in the presentation of a Traditional Artisan Pizza.

During the course, the curriculum covers three (3) kinds of Pizzas, namely the Classic Round Pizza, Pizza by the Meter and Pan-Tray Pizza, using the processes researched , developed and formulated by Master Pizza Maker Angelo Lezzi, President of API himself. 

Course Plan & Subjects

Theory and hands-on practical learning is delivered over a course of 3 Days (24 Hours) and covers the following -

Theory

  • Understanding the Physical and Chemical Characteristics of the ingredients.
  • Balancing the Recipe - Direct and Indirect Doughs.
  • Understanding Maturation of the Dough.
  • Rising (Proving) of the Dough.

Practical

  • Development and Management of the Dough.
  • Handling and Preparation of Classic Round Pizza, Pizza by the Meter and Pan-Tray Pizza.
  • Preparation of Toppings.
  • Perfecting the Art of Cooking a Pizza and Practice.

3. For the Entrepreneurs planning to open a Pizza Shop / Pizzeria

Pizza for Entrepreneurs and Professionals

The Pizza for the Professionals / Entrepreneurs is a course specially designed for those looking to learn the art of Authentic Artisan Italian making at entrepreneurial levels, and covers all the techniques taught in the Pizza at Home and the Pizza for Commercial Cook together with additional knowledge that incorporates the business aspects of commercial Pizza production.

The students enrolling in the course acquire sufficient knowledge and confidence to set-up their very own Pizza Shop / Pizzeria.

A highly intensive theory and hands-on practical learning is delivered over a course of 7 Days (56 Hours) and covers the following -

  • Preparation of Toppings.
  • Perfecting the art of Cooking Pizza and Practice.
  • Pizza Project - Design and Present a Wide Range of Artisanal Pizzas.
  • Business Insights - Preliminary insights into setting up a successful Pizzeria / Pizza Business.
